Bison Round Medallions are not what most folks assume them to be... They are not filet and instead are more akin to round steak. We trim our bison rounds to the point that they are completely free of fat and connective tissue and then proceed to carve them into 1" thick medallions. Cooking to rare or medium rare allows the rich flavor of bison round to percolate your taste buds.
